It's officially Fall! And we're kicking things off with a sweet + cozy treat made with everyone's favorite fall flavor, pumpkin!
This recipe may taste like dessert, but it doesn't skimp on nutritious ingredients either. We've included ingredients that provide an extra boost of protein, fiber, omega 3s, vitamins, minerals, AND antioxidants!

Pumpkin Sacha Inchi Oat Bars

Ingredients
- 1 cup GF rolled oats
- 1/3 cup pumpkin seeds
- 2 tbsp chia seeds
- 1/2 cup dark chocolate chips
- 1 cup pumpkin puree
- 1/2 cup Sacha Inchi seed butter
- 1/2-3/4 cup maple syrup
- 1 tbsp pumpkin spice
Instructions:
- Preheat oven to 350F. Line a square baking dish with parchment paper.
- In a bowl, combine all of the ingredients. Pour mixture into baking dish and use a spatula to spread evenly.
- Optional: sprinkle extra pumpkin seeds on top.
- Bake for 25 minutes or until a toothpick comes out clean from the center.
- Let cool completely and then slice into squares. Store in the fridge or wrap each bar individually and freeze.
- Delicious at all temperatures but best enjoyed warm!
